Vital Babies Morning Tea: Anzac Biscuits

Week 3 of Vital Babies today & it was a really great session.

We had a yummy morning tea which was:

Anzac Biscuits (based on a recipe by The Healthy Chef)

1 ½ cups organic rolled oats
½ cup organic desiccated or flaked coconut
2 ½ tablespoons coconut oil
2 tablespoons honey
1 teaspoon vanilla extract or 1/2 teaspoon vanilla bean powder
1 tablespoon water

Combine oats and coconut into a food processor
Add the oil, honey and vanilla.
Mix well for about 15 – 30 seconds or until combined.
Add the water and process again. The addition of water will help the cookie mixture stick together.
Form into 20 small cookies and place onto a baking sheet lined with baking paper.
Bake for 20 -30 minutes in a low 150 C (300 F) oven. or until golden brown.
